Delicious and healthy banana oat muffins made effortlessly in the air fryer, perfect for a quick breakfast or snack.

Ingredients

Dry Ingredients

  • 1 cup rolled oats (use gluten-free if necessary)
  • 1/4 cup honey (or maple syrup)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon

Wet Ingredients

  • 2 large eggs (substitute with flax eggs for vegan)
  • 2 ripe bananas (the riper, the sweeter)
  • 1/2 cup Greek yogurt (use dairy-free yogurt to make vegan)
  • 1 tsp vanilla extract

Optional Mix-ins

  • nuts, chocolate chips, or blueberries mix-ins (optional)

Instructions 

  • Preheat air fryer to 320°F (160°C). Mash bananas and mix with eggs, yogurt, honey, and vanilla.
  • Combine dry ingredients in a bowl. Fold dry mixture into wet ingredients just until combined.
  • If desired, fold in nuts or blueberries. Line muffin cups and fill three-quarters full.
  • Place muffin cups in air fryer and cook for 15-17 minutes until a toothpick comes out clean.
  • Cool muffins on a wire rack for 10 minutes before serving.

Notes

For extra flavor, add your favorite mix-ins before baking.
