Ingredients
Bulgur

Instructions
Cook or soak the bulgur until tender, then drain and cool.
Combine diced cucumber and tomato with ½ teaspoon salt; let rest for 10 minutes.
Finely chop parsley and stems, then add to a large bowl with cooled bulgur, mint, and green onion.
Strain and discard excess juice from cucumber and tomato, then add to the bowl.
Whisk together olive oil, lemon juice, garlic, and remaining salt; pour over salad and toss.
Let sit for 15 minutes to develop flavors, then serve or chill.
Notes
Chill the salad for best flavor, and adjust lemon or salt to taste.
