Instructions
Preheat oven to 180°C. Roast sweet potato with 1 tsp oil and salt for 35 minutes.
Prepare chickpeas by mixing with sriracha, maple syrup, paprika, garlic powder, salt, then cook in a saucepan for 5-10 minutes until slightly sticky.
Wilt spinach and cabbage separately, season lightly, then set aside.
Assemble the bowl by placing rice at the bottom, then topping with roasted sweet potato, chickpeas, spinach, cabbage, and sliced avocado.
Whisk dressing ingredients and drizzle over the bowl before serving.
Notes
