A vibrant and healthy Mediterranean-inspired dish featuring fluffy couscous, fresh vegetables, and a creamy tahini sauce.

Ingredients

Broth and Spices

  • 2 cups low-sodium vegetable broth
  • 0.5 teaspoon cumin seeds

Couscous

  • 2 cups whole wheat couscous or Israeli couscous

Seasonings

  • to taste N/A Sea salt
  • to taste N/A Freshly ground black pepper

Vegetables and Toppings

  • 9-10 cups romaine lettuce, cut into 1-inch pieces
  • 1 15-oz. can chickpeas, rinsed and drained
  • 1 medium cucumber, finely chopped ((1½ cups))
  • 1 medium tomato, finely chopped ((1 cup))
  • 1 red onion thinly sliced ((1 cup))
  • 2 tablespoons fresh parsley, finely snipped
  • 1 tablespoon lemon juice
  • 1.5 cups Tahini Dipping Sauce

Instructions 

  • Bring broth and cumin to a boil, stir in couscous, cover, and let stand 15 minutes.
  • Fluff couscous, then divide lettuce, chickpeas, cucumber, tomato, onion, and couscous into bowls. Garnish with parsley, lemon juice, and drizzle with tahini sauce.

Notes

Adjust salt and pepper to taste, and serve immediately for best freshness.
