Instructions
Preheat oven to 350°F (180°C). Grease a baking dish and grate all cheeses; set aside.
Cook pasta in salted boiling water until al dente, then drain.
Melt butter, sauté onion until golden, then add garlic and ginger; cook 1 min.
Add spices, then flour; cook until smooth. Whisk in coconut milk and simmer until thickened.
Remove from heat, stir in ¾ of cheeses, season, then combine with pasta. Transfer to baking dish, top with remaining cheese and parmesan, then bake 20–25 mins until golden.
Notes
For a richer flavor, toast the spices before adding to the sauce.
