Ingredients

Spice Paste

  • 0.5 cup coconut
  • 0.5 cup edamame beans (ready-to-eat)
  • 1 dried chili dried chili
  • 1 tsp cumin seeds
  • 0.25 tsp turmeric
  • 1 tbsp rasam powder
  • 1 tsp tamarind paste

Main Ingredients

  • 510 grams edamame (2 packs ready-to-eat)
  • 2 tsp oil
  • 0.5 tsp mustard seeds
  • 0.5 tsp cumin seeds
  • pinch asafoetida asafoetida
  • 0.25 tsp fenugreek
  • 10 curry leaves curry leaves
  • 0.93 cup onion (optional)
  • 2 tsp salt
  • 1 cup water (divided)

Additional

  • small piece jaggery jaggery
  • 0.25 cup cilantro

Instructions 

  • Rinse and soak edamame until ready to use.
  • Blend coconut, edamame, chili, cumin, turmeric, rasam powder, and tamarind into a smooth paste.
  • Heat oil, add mustard, cumin, asafoetida, curry leaves, and onions; cook until translucent.
  • Add drained edamame, salt, and water; cook briefly to absorb flavors.
  • Stir in ground masala, add jaggery, bring to boil, then garnish with cilantro.

Notes

Use pre-cooked edamame for quick preparation.
