Ingredients

Dried Legumes

  • 1 cup dried chickpeas (soaked overnight)
  • 2 cups cooked quinoa
  • 2 cups mixed greens
  • 1 cup diced cucumbers
  • 1 cup cherry tomatoes
  • ½ cup fresh cilantro
  • ½ cup fresh parsley
  • 3 cloves garlic (minced)
  • 1 small onion (diced)
  • ½ red onion (red onion, sliced)
  • 1 shredded carrot
  • 1 avocado avocado (sliced)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon cayenne pepper
  • ½ teaspoon baking powder
  • 3-4 tablespoons chickpea flour (adjust as needed)
  • ½ cup hummus
  • ¼ cup pickled red cabbage
  • ¼ cup tahini
  • 1 lemon lemon (juiced)
  • 2 tablespoons olive oil
  • 2 tablespoons water
  • 1 teaspoon maple syrup

Seasonings

  • as needed Oil for cooking

Instructions 

  • Soak chickpeas overnight, then drain and dry.
  • Blend chickpeas, herbs, garlic, onion, spices, and baking powder until coarse.
  • Add chickpea flour to bind, refrigerate for 30 minutes.
  • Form mixture into 12 balls, fry in hot oil until golden, then drain and season with salt.
  • Mix tahini, lemon juice, olive oil, garlic, and water for sauce.
  • Cook quinoa, layer in bowls with greens, cucumbers, tomatoes, falafel, and drizzle with tahini sauce. Garnish with avocado and herbs.

Notes

For best results, ensure oil is at proper frying temperature and refrigerate mixture to make shaping easier.
