A comforting German dish featuring tender kohlrabi in a creamy sauce, perfect as a side or light main.

Ingredients

Vegetables

  • 2 pounds kohlrabi (about 2 pounds total)
  • 1 small yellow onion (or 1/2 large)
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 cup vegetable broth (or water)
  • 0.25 teaspoon salt (more to taste)
  • 0.25 teaspoon ground nutmeg (optional)
  • to taste black pepper
  • 0.25 cup whipping cream (or heavy cream)

Instructions 

  • Peel and cut the kohlrabi into cubes or sticks.
  • Sauté diced onion in butter until translucent, about 3-5 minutes.
  • Add kohlrabi, sprinkle flour, and stir in broth. Cover and cook until tender, 15-20 minutes.
  • Reduce heat, add salt, nutmeg, pepper, and stir in cream. Simmer 1-2 minutes.
  • Adjust seasoning and serve hot, garnished with parsley if desired.

Notes

Ensure not to overcook the kohlrabi for the best texture.
