Instructions
Whisk olive oil, oregano, and lemon juice to make the dressing.
Marinate halloumi slices in half of the dressing while preparing other ingredients.
Slice cucumber, halve cherry tomatoes, and thinly slice onion. Prepare tzatziki if making homemade.
Cook halloumi in a skillet over medium-high heat until golden, flipping after 2-3 minutes.
Assemble bowls with rice, veggies, halloumi, tzatziki, olives, feta, and pita. Drizzle with remaining dressing.
Notes
For extra flavor, soak onions in water before adding to the bowl.
