1/2cupCherry tomatoes (halved)
1/2cupCucumber (diced)
1/4cupShredded carrots
1/4cupSliced avocado
Dressing
2tbspTahini
1tbspLemon juice
1tbspWater (adjust for consistency)
1tspMaple syrup (optional)

Instructions
Preheat oven to 200°C. Toss chickpeas with olive oil, paprika, garlic powder, and salt; roast for 20–25 minutes until crispy.
Whisk tahini, lemon juice, water, maple syrup (if using), and black pepper to make the dressing.
Divide cooked quinoa into bowls. Top with spinach, cherry tomatoes, cucumber, carrots, and avocado.
Add roasted chickpeas and drizzle with tahini dressing. Rest for 5 minutes before serving.
Notes
For extra flavor, add a squeeze of lemon or a sprinkle of black pepper on top.
