These high-protein pumpkin muffins are perfect for a nutritious snack or breakfast, combining pumpkin, Greek yogurt, and chocolate chips for a delicious treat.

Ingredients

Dry ingredients

  • 1 cup old fashioned rolled oats
  • 1 cup pumpkin puree
  • 1 cup Greek yogurt (preferably nonfat or low-fat)
  • 2 large eggs
  • ½ cup vanilla flavored protein powder (about 50–60 grams)
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • Pinch sea salt
  • ½ cup dark chocolate chips

Instructions 

  • Preheat oven to 350°F (175°C). Line a muffin tin with liners.
  • Blend oats into a fine flour in a food processor or blender.
  • Add pumpkin, yogurt, eggs, protein powder, spices, baking powder, baking soda, and salt. Blend until combined.
  • Stir in about ⅓ cup chocolate chips by hand.
  • Distribute batter into muffin liners, top with remaining chocolate chips, and bake for 25–30 minutes.

Store in an airtight container for up to 3 days or freeze for longer storage.
