A unique and refreshing curry combining the sweetness of watermelon with aromatic spices, inspired by Rajasthan cuisine.
Ingredients
Watermelon

Instructions
Puree half of the chopped watermelon in a blender.
Heat oil in a skillet, add cumin seeds until fragrant, then stir in ginger garlic paste for 30 seconds.
Add watermelon puree and cook on medium-high heat. Mix in chili powder, turmeric, and coriander.
Bring to a boil, then simmer for 10 minutes. Add chopped watermelon, sugar, salt, and lemon juice. Cook for 5 minutes.
Notes
This dish is best served chilled and pairs well with rice or flatbread.
