A vibrant and healthy salmon bowl featuring crispy salmon, fresh vegetables, and cauliflower rice for a nutritious meal.

4-6ozsalmon fillets(skin removed and cut into 1 inch cubes)
2tbspolive oil
2tsplime juice
1tspfresh ginger(grated)
1clovegarlic(minced)
1/2tspsmoked paprika
1/4tspflakey sea salt
1/4tspblack pepper
Vegetables
2bagsfrozen cauliflower rice(200g / 2 cups when water removed)
3ozTenderstem broccoli(80g)
2ozgreen beans(60g)
1/2avocadoavocado(sliced, 90g)
1/3cupcucumber(sliced, 60g)
1/2yellow pepperyellow pepper(sliced, 50g)
2spring onionsspring onions(sliced (15g))
1tbspcoriander / cilantro(finely chopped)
1/4tspsesame seeds(black or white)
1/4cupsugar free pickled onions(optional)
1tbspmayonnaise(drizzled (optional))
Instructions
Mix olive oil, ginger, garlic, paprika, lime juice, salt, and pepper to make the dressing.
Toss salmon cubes with half of the dressing. Air fry at 180°C for 6 minutes until crispy.
Spray broccoli and green beans with oil, cook for 2 minutes in the air fryer.
Microwave cauliflower rice for 4 minutes, then cool and squeeze out water. Toss with a little olive oil and salt if desired.
Assemble bowls with cauliflower rice, salmon, vegetables, avocado, spring onions, cilantro, sesame seeds, and drizzle with remaining dressing. Add pickled onions and mayo if desired.
