A quick and flavorful Middle Eastern breakfast dish featuring eggs poached in a spicy tomato sauce, perfect for a solo meal.

Ingredients

Oil

  • 1 tablespoon oil

Vegetables

  • 0.5 medium onion, diced
  • 2 to 3 cloves garlic, minced

Tomatoes

  • 4 to 6 medium tomatoes (*)
  • 0.5 cup water ((120 milliliters))
  • 3 tablespoons tomato paste
  • 1 to 2 teaspoons vegetarian chicken bouillon powder

Eggs

  • 2 pieces eggs

Instructions 

  • Heat oil in an 8-inch skillet over medium heat. Add onions and cook until translucent (~5 min).
  • Add garlic and cook until fragrant (~1 min).
  • Add tomatoes, water, tomato paste, and bouillon. Simmer for 15 min until thickened.
  • Create a well in the sauce, crack eggs into it, cover, and cook until whites are set (~3-4 min).

Notes

Use fresh tomatoes for best flavor. Serve with bread or pita.
