Instructions
Cook brown rice in 2 cups of water until tender, about 20 minutes.
Press and cube tofu, then pan-fry until golden and crispy.
Prepare the teriyaki sauce by mixing soy, water, garlic, ginger, vinegar, and arrowroot powder.
Stir-fry vegetables until tender, then add tofu and sauce, cooking briefly to combine.
Serve the tofu and vegetables over rice, garnished with green onions and sesame seeds, drizzled with teriyaki sauce.
Notes
For extra flavor, marinate the tofu in soy sauce before cooking.
