A flavorful and nutritious bowl combining tender chicken, vibrant vegetables, and a creamy peanut sauce, served over rice or quinoa.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts (about 600g)
  • 3 cloves fresh garlic (minced)
  • 2 tbsp vegetable oil
  • 1 inch fresh ginger (grated)
  • ¼ cup low-sodium soy sauce
  • ½ cup creamy natural peanut butter
  • 2 tbsp honey or maple syrup
  • 1 cup canned coconut milk

Vegetables

  • 2 cups mixed vegetables (bell peppers, carrots, snap peas)

Grains

  • 2 cups cooked rice or quinoa

Instructions 

  • Slice chicken into bite-sized pieces and cook in heated oil until golden (6-8 min).
  • Add garlic and ginger; sauté until fragrant (1 min).
  • Mix soy sauce, peanut butter, honey, and coconut milk; pour over chicken and simmer briefly.
  • Add vegetables; cook until tender yet crunchy (5 min).
  • Prepare rice or quinoa as per package instructions.
  • Assemble bowls with grains, chicken, and vegetables; garnish as desired.

Notes

For extra flavor, garnish with chopped peanuts and fresh cilantro.
